What is it? A prized cut among beef-lovers, this French-trimmed bone-in steak is sure to inspire awe at any dinner table. Other names for this cut include “frenched bone-in ribeye,” or “cote du boeuf", even sometimes also called a "Cowboy Steak" (but our version of the Cowboy Steak has a shorter bone.
