Angus Test Kitchen: Apple-Maple-Cran Pork Roulade

Apple-Maple-Cran Prime Pork Roulade

A dish cooked or served in the form of a roll, typically made from a flat piece of meat, fish, or sponge cake, spread with a soft filling and rolled up into a spiral.

 

We've been trying out some new tasty flavors here at the shop. Our latest creation was the delicious and savory italian comfort food delight, the Beef Italian Ragout. Now that the Ragout dish is complete, we've moved on to some spring-time fare, and we think you'll be as excited about it as we are. Read on for the savory details! (Oh, we should mention -  we are of the belief that folks shouldn't trust a cook who doesn't love their own cooking!)

Angus Brands has been a long-time food connoissuer. Alongside our resident Chef Curtis, you'll find we're always mixing, baking, marinading, roasting, bbqing, and broiling until we've achieved the perfect flavor combination that we feel will "WOW" our "guests" (or shoppers!). And we don't stop until it's at a "WOW" status! 

And now, let me introduce you to our newest creation: Apple-Maple-Cran sausage stuffed Prime Pork loin roast; or, Pork Roulade. 

What is it made of? 

First off, we make the sausage. Our Apple-Maple-Cran sausage is made with northwest raised pork, fuji apples, cranberries, rosemary, and 100% pure maple syrup. 

Normally, we make this Apple-Maple-Cran sausage into 2" "Little Stouts" Sausage links, which we offer in convenient 1-lb vac-sealed packages here. 

But this time, we stuffed it inside of a Prime Pork loin roast and covered it in pieces of our famous Butcher Shop thick-cut bacon! 

Once complete, 

It has to be tested, of course! We baked a 1 lb portion at pretty high heat (425 F.) for  about 30 minutes or so. Since we used high-quality, Duroc (brand) pork loin, the pork loin stays supple and moist while the bacon crisps up nicely on the outside, flavoring the pork with it's delectable juices. The sausage is slightly sweet, with pieces of fuji apples and dried cranberries inside, and a hint of real maple syrup, which compliments the toasty, savory bacon and pork like a dream! 

We can hardly wait for you to try this savory-sweet apple-maple-cran treat. If you're a fan of quality meats and local handcrafted goodness, you love smokey bacon, and you crave that salty-sweet combo, then...

YOU ARE GOING TO LOVE THIS!

Cooking is super easy. Just put it on a heavy-duty sheet at 425 for about 30 minutes, then cover and roast for 15-20 more minutes until internal thermometer reads 145-155 F. You can use the broiler for a couple minutes if you prefer really crispy bacon!
